Our Story

The Sausage Roll Sanctuary  was born from a simple observation: people love sausage rolls, but most on the market are so utterly disappointing—low in quality, high in fillers, and made with factory-farmed meat. We saw an opportunity to do things differently. Why not make sausage rolls with ethically sourced, high-quality, free-range British pork and produce a British classic of a standard deserving of its popularity, something rather exceptional.
So, that’s exactly what we do.

The story here is really all about simplicity. Do one thing well. And that is exactly what we do. We are not trying to over complicate things and be too clever, we are not trying to reinvent or elevate or deconstruct, we just believe in making a product, the sausage roll, using the best quality produce.

Primarily that means using high quality, free-range, British pork, also using only prime cuts appropriate to making good quality sausage meat, (in this case shoulder and leg), supported by equally well sourced natural and fresh ingredients.

The second part is equally simple: how do people really like to eat their sausage rolls, or indeed any baked product? Well, people like them freshly baked, still warm from the oven. So, our answer for this is to take the oven, or indeed ovens, to the market and do the baking there, serve the sausage rolls, still warm, maybe even hot, straight from the oven.

We also have a third part: we sell them to you, frozen and raw, for you to take them home (or supplied to your pub or other business), where you can also very simply bake them as and when you want them, to again enjoy them, as they should be, as like them, freshly baked and warm from the oven. Simple job. Done properly.

Our Ingredients

At The Sausage Roll Sanctuary, there is an understanding and acknowledgement that in order to make the best food, you have to start with the best possible produce and ingredients. That’s why we go the extra mile to source high quality, ethically produced components for our sausage rolls. Every element is carefully chosen to ensure the standards meet our expectations for taste and sustainability.

The primary ingredient of our sausage rolls is free-range British pork from a family-run farm in Kent’s Romney Marsh. This premium pork forms the foundation of our handmade sausage rolls, juicy meat and melting fat resulting in amazing flavour and texture. But it’s not just the meat that makes our rolls exceptional. Our seasoning blend is custom-crafted by a family-run specialist in Scotland, a carefully balanced blend of herbs and spices to enhance the natural flavour of the pork. The result is just superb  and uniquely ours.

To make our variety of different flavoured sausage rolls we use fresh ingredients —like apples, chilies and  ginger —when the recipe calls for it. And to hold it all together, we use a high-quality puff pastry that’s perfectly flaky and golden when cooked. 
 
Transparency is at the core of everything we do. From the farms and suppliers we partner with to the careful balance of our recipes, every ingredient reflects our dedication to crafting homemade sausage rolls that are both delicious and ethically produced. We take pride in every bite, and we know you’ll taste the difference.

  • Our pork comes from Marsh Produce, a family-run farm in Kent’s Romney Marsh. Their rare-breed pigs are reared with care, and their commitment to sustainable and ethical farming practices aligns perfectly with our values.   • Pastry is the all important support act here so sourcing good quality pastry is just as important as all of the other ingredients. It would be great to say that we made our own puff pastry but not so great if we had to quadruple the price of every sausage roll sold!

Meet our founder.

"The idea to start making and producing quality sausage rolls, as a business, came from the observation that people really do love sausage rolls. I worked as a chef in a gastro pub, where we did produce very decent food: a menu that, as the head chef, I was responsible for producing; a menu that made me a finalist in nation wide competition the ‘Publican’ awards, in the category for Food Innovation.

Yet nothing on that menu could come close to the popularity of the freshly baked sausage rolls, just stacked on a platter on the bar, served warm from the oven. We just couldn’t make enough of them.

 

I really didn’t like being a ‘chef’. I love food, I love eating good food and I love making good food but I hated being a ‘chef’--I hated the lifestyle, the horrible working conditions and the unsociable hours.
 

So, on the side, armed with nothing more than an idea, I started to make sausage rolls, just in my own kitchen, my own very small kitchen at home, but better. Slowly improving and improving, sourcing better and better produce, eventually buying my own meat grinder and sourcing free-range meat direct from the farm. Then I ventured out and to tried find and persuade a few proprietors, managers and chefs of south London pubs, how brilliantly popular good quality sausage rolls are and what a great thing, done the right way, they are to offer to their customers. This was harder work that you might like to think, certainly harder work than I would have liked to think.

The natural progression instead, totally confident that this is what people wanted, was to start selling direct to the public, under my own business name, at street markets.
